Noodles
Noodles are strings or ribbons of unleavened baked dough. The U.S. FDA defines all pastas as either noodles or MACARONI. Noodles must contain one or more of the following: milled durum WHEAT flour, farina (coarsely ground wheat endosperm from less-hard wheat), or semolina (a granular product of milled durum wheat), together with 5.5 percent egg. (Macaroni need not contain egg.) Noodles have been a mainstay of Asian cookery since ancient times. RICE flour and MUNG BEAN flour are popular in Southeast Asia. Today, noodles are stirfried, pan-fried, or used in soups and sauces. Specific examples include:
• Mung bean thread noodles (transparent noodles or jelly noodles) resemble silver threads. They soften rapidly in water and are a staple in China, Indonesia,Malaysia, and Japan.
• Rice noodles are thin and wiry when dry. When soaked in water and cooked, they soften and form the basis of many dishes. Rice noodles are popular in Burma, Cambodia, Indonesia, and Vietnam.
• Soba noodles are made from BUCKWHEAT.
• Udon noodles are thick noodles prepared from wheat flour without eggs. They can be either flat or round.
• Bean curd noodles, also called soy noodles, resemble typical egg noodles except they are somewhat thicker and may be grayish in color.

How Healthy is Coffee Really?
Coffee is one of the most popular drinks around
the world. There are many different types of coffee and experts claim that
there are more flavors of coffee than there are of wine. Coffee contains caffeine, a stimulant that raises ourawareness,
keeps us from falling asleep or simply gives us a kick in the morning
or after lunch.
Food experts, however, are still undecided on
how healthy coffee is. For a long time doctors have told people not to drink
too much coffee, because it may lead toheart problems, high blood pressure, insomnia and headaches.
Scientists have now
found out that it is the quality of coffee and the way it isbrewed that
holds the key to our health. Elderly people on the Greek
island of Ikaria, live longer than normal. Among other things, this islinked to
the consumption of a strong brew of coffee. Experts also point
out that different roasts and types of coffee beans have
different effects on our health. Milk and sugar change the different levels of caffeine in a cup of
coffee.
A new study by a
Harvard research group says that there is no link between
coffee and health problems. Drinking several cups of strong coffee a day is not
connected with premature death or other heart diseases. Doctors, however,
warn against drinking too much coffee, as it can lead to stomach problems.
Coffee has many advantages,
as the new study suggests. While alcohol makes people lethargic and
slow-moving, coffee gives them energy. Getting together for a cup of coffee is
also a form of socializing and has a positive effect onrelationships.
Although a lot still
needs to be uncovered about coffee, it seems to reduce the
risk of cancer and diabetes. Reports show that people who drink coffee may develop Parkinson’s
disease later in life, or maybe not at all. Neurologists think
that coffee may have a positive effect on connecting passageways in
our brain.

Eggs
The protein in raw
eggs are only 51% bio-available, whereas a cooked egg is nearer 91%
bio-available, meaning the protein of cooked eggs is nearly twice as absorbable
as the protein from raw eggs. A boiled egg can be distinguished from a raw egg
without breaking the shell by spinning it. A hard-boiled egg's contents are
solid due to the denaturation of the protein, allowing it to spin freely, while
viscous dissipation in the liquid contents of a raw egg causes it to stop
spinning within approximately three rotations. Boiled eggs that are difficult
to peel are usually too fresh. Fresh eggs have a lower pH, and this does not
allow the shell to separate easily from the underlying albumen. When put into
vinegar the shell will disintegrate slowly.
Cholesterol and Fat
More than half the calories found in eggs come from the fat in the yolk; a 100 gram chicken egg contains approximately 10 grams of fat. People on a low-cholesterol diet may need to reduce egg consumption, although most of the fat in egg is unsaturated fat and may not be harmful. The egg white consists primarily of water (87%) and protein (13%) and contains no cholesterol and little, if any, fat.

cholesterol) which actually assists in lowering LDL (bad cholesterol) in the
blood.
There is debate over
whether egg yolk presents a health risk. Research suggests consuming eggs
increases both 'good' and total cholesterol levels, though moderate consumption
of eggs, up to two per day, does not appear to increase heart disease risk in
healthy individuals. A 2007 study of nearly 10,000 adults demonstrated no
correlation between egg consumption and cardiovascular disease or strokes
except in the sub-population of diabetic patients which presented an increased
risk of coronary heart disease.
