Liquid Diets

liquid diets are the diets that range from clear liquids to complete liquefied foods. Whatever their formulation, the use of liquid diets requires medical supervision. Clear liquid diets include only clear liquids such as carbonated beverages; COFFEE and coffee substitutes; flavored gelatins; strained fruit juices; fat-free broths of MEAT, FISH, and POULTRY; BOUILLON; and consommé. They are used before intestinal surgery or X rays of the gastrointestinal tract; and for oral feeding of critically ill patients. They also help maintain FLUID BALANCE.
ELEMENTAL DIETS, also called semi-synthetic diets, are free of FIBER and contain easily absorbed, refined carbohydrates such as simple SUGARS; VEGETABLE OIL as a source of FAT; AMINO ACIDS supplied as purified powders or as hydrolyzed CASEIN (milk protein) or hydrolyzed ALBUMIN (egg protein); and purified MINERALS and VITAMINS. Elemental diets aid DIGESTION and minimize food residues in the colon. They are used before GASTROINTESTINAL TRACT surgery, and in cases of intestinal disease, severe malnourishment, and critical illnesses. Full liquid diets provide liquefied foods, including meat, fish, MILK, and strained cottage cheese; custard and pudding rather than whole EGGS; as well as strained vegetables, strained juices, and pureed fruits. Berries with small seeds are excluded, as are strongly flavored vegetables; dry cereals; bread; high-fat, chunky soup, stews; desserts (with nuts or other solid foods) and strongly flavored seasonings, condiments, and spices. These diets are used for patients who cannot chew or swallow whole foods; as meal replacements when incorporated into a weight loss program; or as supplemental feeding programs. Liquid diets are usually deficient in fiber and certain nutrients; hence supplements may be recommended. INFANT FORMULAS are commercially produced and can replace breast-feeding of young infants. They are usually based on cow’s milk or a milk substitute such as soy protein that contains added minerals, vitamins, vegetable oil, and LACTOSE (milk sugar) to meet specific food and drug administration requirements to assure adequate infant nutrition.
